In 1983, Guido Serio and his wife Isa came to the San Fabiano Calcinaia property, investing in wine agriculture and a team of quality winemakers. In recent years the wines of San Fabiano have been recognized under the Gran Selezione designation, also by acclaimed wine critic James Suckling. Set in the magical town of Castellina in Chianti, the rolling hills and magnificent buildings of this grand estate are breath taking.  Known for their old school rich Chianti, San Fabiano Calcinaia has one foot in history while the other is stepping to the future. Mostly organic certified, the team hits a home run with classic style Chianti.

Cerviolo Bianco Toscana Igt 

An equal blend of organic certified Chardonnay and Sauvignon blanc. Ia beautiful expression combining of these two great varieties coupled with the expressive power of a territory and a fermentation method that makes this white wine have a complex and fascinating; aromatic varietal notes are bound to a mineral component and a consistent structure that able to make a medium or long term aging.

Casa Boschino Toscana Igt

Fresh, pleasant, undemanding, it is the wine of San Fabiano that fits all occasions. Produced with irganic grapes - 70 % Sangiovese with a good heap of Merlot and a touch of Cabernet S.  A quality easy going wine for every day.. Excellent as an aperitif, it goes to a simple and lightweight.

Chianti Classico DOCG

From the organic certified Estate's south west vineyards named San Fabiano, 250 m above sea level  and Cellole 450 m above sea level.  Careful selection of the Sangiovese 90% - Others 10% in the field and in the wine cellar; fermentation at controlled temperature with medium long maceration on the skins (from 10 to 15 days); soft pressure. The wine-making and -aging are carried out by separating the grapes according their different production area. The blending takes place only at the end of aging to guarantee the best quality. Maturation in tonneau of 2nd passage for about 12 months. Refinement in the bottle for at least 6 months; persistent perfume with signs of violet, mature fruits and spices. It has a long-lasting structure and the freshness mark of the flavor stand out, which pleasantly accompanies the notable amount of strong and velvety tannins. This long wine is well balanced, uniting in a pleasant way the feeling of heat to the soft elegance of the tannins and to the correct acidity.

Chianti Classico Gran Selezione “Cellole” DOCG

The first selection of grapes, Sangiovese 90% - Others 10% takes place in the vineyard at harvest, a second careful selection is done in the discharge of the grapes in the cellar. Following the separation of stalks and subsequent gentle pressing of the grapes. The fermentation is made with yeast strains selected in the Chianti Classico at a temperature of 28-32 ° C. Skin maceration lasts 15-20 days, after which you run a soft pressing. Aging: in barrels of 1 st -2nd° passage for 24 months followed by 6 months of aging in bottle. Ruby red color with garnet that incerase with aging: fine scent, intensive, persistent, with floral hints of red fruits and of red fruits and spices; it presents a remarkable structure, at taste is very balanced, harmonious, elegant, elegant, fruity and velvety tannins that evolve with the progress of aging.

“Cerviolo Rosso” Toscana IGT

Careful selection of the grapes, Cabernet S. 50% - Merlot 25% - Petit Verdot 25% m of 1st choice in the field and further choice in the cellar; fermentation at controlled temperature with long maceration on the skins (20 days and more); soft pressure, maturation on the lees and malolactic in barriques. In barrique of 1 st passage for 20 – 22 months about and after at least 12 months of maturation in bottles.   Red ruby very intensive color with high violet tones and orange nuances, that increases with the age, fine, intensive, very persistent perfume, with an aromatic complexity, from violet and cherry tones to spices like liquorice and pepper, until vanilla, cacao, tobacco flavours . Wine with a strong structure, at the mouth, it is warm, enveloping, soft and elegant for its complex tannic structure; very long final at taste. It is an harmonic wine, able to express itself better after a long aging, but to give big emotions, even if it is drunk quite young.
